I think porridge is the ultimate comfort food and there's not much that makes me happier at this time of year! The best bit is that when you cook it from scratch with good ingredients, you can feel absolutely confident that you are filling your body with something highly nutritious. Thanks to the slow release of energy from the oats it will also keep you full right up until lunchtime - a saviour at this time of year, when we're trying to ween ourselves off that mid-morning chocolate from Christmas.

Serves 2
10 minutes
Ingredients
150g fresh or frozen blackberries
90g oats
2 apples, grated skin on
1 tsp cinnamon
250ml almond milk or your milk of choice
250ml water
Method For Apple Porridge with Blackberry Compote
Simmer the blackberries over a low-medium with 2 tbs of water for approximately 10 minutes, until they have a loose jam consistency.
In another pan, simmer the oats with the apple, cinnamon, milk and water over a low-medium heat. Cook for approximately 10 minutes, until thick and creamy.
Serve the compote on top of the porridge and add a dollop of almond or peanut butter if you wish.
