This porridge will brighten up the greyest of autumn days - combined here with maple, turmeric and ginger, it has a sweet, warm flavour and will leave you feeling nourished and comforted. This is a great recipe to add to your repertoire as we head into the flu season. The turmeric and ginger contain antioxidants that have been shown to keep the immune system healthy, and ginger has powerful antiviral and antibacterial properties.

10 minutes
Ingredients
90g oats
1/2 tsp turmeric
1/2 tsp ginger
1.5-2 tbs maple syrup, depending on your prefence
250ml coconut milk or other milk
250ml water
Method
Simmer the oats with the milk, turmeric, ginger and maple syrup, over a low-medium heat. Cook for approximately 10 minutes, until thick and creamy. If the porridge starts to stick, add a bit more milk to loosen it up.
Serve immediately, either on its own, or with fruit of your choice and a sprinkle of pumpkin seeds.
