Spicy Roasted Nuts

Warning - these are so delicious you might just eat them all in one go. They make a lovely snack for entertaining over the Christmas period, and they are easy - you can prepare them in less than 10 minutes.


They will keep for up to 2 months in an airtight jar so you could make a double batch to tide you over a two or three occasions if you like.


Serves 6-8

Ingredients


250g mixed nuts (cashews, peanuts, walnuts, almonds, pecans)

1 tsp black pepper corns or ground black pepper

1 tsp sea salt

1/4 tsp cayenne

2 large sprigs fresh rosemary

1 tbs honey

1 tbs groundnut, olive or avocado oil


 

Method for Spicy Roasted Nuts


Pre-heat the oven to 160 degrees C/320 degrees F.


If you are using black peppercorns, start by grinding them to a fine powder using a pestle and mortar.


Add the nuts, pepper, salt, cayenne, honey and oil to a large bowl and mix, until the nuts are well coated. Pull the rosemary leaves from their stalks and stir into the mixture.


Tip the nut mixture out onto a baking tray and bake in the middle of the oven for 18 minutes, until golden and fragrant.
